How to Cook Adobo with thicker sauce

Adobo is a comfort food of Filipinos, that is why it is considered as Philippine’s national dish. Every household  has its own way of cooking adobo, likewise to the basic ingredients used. It is basically meat, usually pork and chicken, cooked salty with aromatic stew flavored by soy sauce and vinegar with bay leaves. Adobo is not only limited to pork and chicken, it can also be other meat like goat meat, beef, etc. Other sea foods are also possible like squid (pusit), shrimp (hipon) and some vegestables as well like spinach (kang-kong) and string beans.  Here we go, let us start with

Pork Adobo


We need to prepare the following ingredients


1 kilo of Pork, cut into cubes
10 cloves of garlic, minced or crushed
1 onion, peeled and chopped
1 tsp crushed black peppercorns
1 small ginger, crushed
3 pcs dried Bay Leaves ( Laurel )
1/2 cup soysauce
1/4 cup vinegar
1 tsp oyster sauce
1 tsp cornstarch, dissolved into 2 tbsp water
2 tbsp cooking oil
salt to taste
sugar to taste
2 cups water
2 pcs potatoe , quartered ( optional )

This is how we do it


1. Combine the pork, soy sauce, oyster sauce, and garlic then marinate for at least 1 hour.
2. In a frying pan put a 2 tbsp oil , then saute garlic, onion, ginger , peppercorn and put-in the marinated pork, cook until golden brown
3.Add water,  put the dried bay leaves then bring to a boil. Simmer for 45 minutes to 1 hour  or until the pork is tender
4. Remove the pork from the sauce pan, set aside
5. Then go back to the sauce, reduce heat to medium low, add the cornstarch and stir occasionally to make sure it doesn’t stick to the bottom.  Cook for 30 minutes until there is very little liquid left in the pan, put salt and sugar depends on your taste. Add some vinegar to taste.
6. Serve with rice, enjoy!

How to Prepare Shrimp- Pomelo salad with an Easy Instructions and Guide

Guys I wanna share this very healthful recipe which I had acquired from a certain recipe book, I tried this once and I found it so interesting. You may also try it for the ingredients are known to have a very high source of vitamin A, B, C and Folic acid necessary for expecting moms. Here are the basic ingredients


You will need 1/2  kg of Shrimps, boiled or steamed then shelled
2 cups cucumber, seeded and sliced horizontally
5 cups of lettuce, strips
2 cups of carrot, strips or flowerrettes
4 cups of pomelo, segmented and sliced
1 cup peanuts, crushed coarsely

Dressing

1 cup of freshly squeezed orange juice
1/2 cup of honey or syrup
4 tbsp of vinegar
1 tsp iodized salt
1 tsp red bell pepper, chopped
1 tsp green bell pepper, chopped
1 tsp onion, chopped


Procedure
Simply toss all ingredients then pour in the dressing, blend well. That's how easy to prepare yet full of nutrients. Enjoy and detoxify with foods rich in vitamin A, C and more!

How to Cook Tinolang Manok ( Chiken Ginger Stew )

       Tinolang manok is a Filipino dish known of its very tasty hot chicken soup cooked with ginger and some vegetables. It is best served during rainy season and cold weather.

                                                




Ingredients

1 Whole Chicken, cut into serving pieces
1 Piece unripe papaya ( or Chayote squash ), peeled and sliced  
1/2 cup fresh pepper leaves ( or Malunggay leaves )
1 small size ginger, crushed and sliced into strips
3 cloves garlic, crushed
1 onion, chopped
2 tbsp fish sauce ( patis )
1 liter of water ( or rice water - 2nd washing )
3 tbsp cooking oil
salt to taste


Cooking Procedure

1. In a casserole, heat oil over medium heat, saute garlic and ginger until golden brown in color, add onions, stir fry until softened.
2. Add chicken and season with fish sauce ( patis ), then cover the casserole to infuse flavor, cook for 3 to 5 minutes until chicken color turns light brown.
3. Pour in water ( or rice water as alternative ), bring to boil until chicken is half done ( it will take 45mins to 1 hr depending on the size of chicken )
4. Add the papaya ( or chayote ), simmer until both chicken and papaya are tender. Add salt to taste.
5. Add the pepper leaves ( or malunggay leaves ) or even both to maximize health benefits, then remove from heat.
6. Best serve when hot. Enjoy!

                            

Ways and Tips on How to Cook Filipino Style Kare Kare with Instructions

Kare kare is one of my favorite traditional Filipino dish. It is simply a meat cooked with peanut based sauce. They mostly used ox tail, beef stripe, or pork leg. Some also are goat meat or chicken depends on your preference. For me personally speaking, I prefer the pork leg. Try this one and you will surely love it!

Kare kare Ingredients
  • 1 bundle of sitaw ( string beans ), cut into 2 inches long
  • 4 eggplants, sliced
  • 1 bundle of petchay ( bokchoy), cut into 2 pieces
  • 1/2 cup cooking oil
  • 1 cup of cooked bagoong alamang ( shrimp paste )
  • 3 cups of Peanut Butter
  • 1/2 cup of ground peanut
  • 2 medium size onions, diced   
  • 2 heads of garlic, minced   
  • 1 1/2 Pork leg, chop
  • 1 small banana flower bud, sliced
  • 1/2 cup of  annatto seed ( soaked in a cup of water )
  • salt to taste
  • 1 liter of water
Cooking Procedure
  • In a large pot, put 1 liter of water, boil the pork leg add onions and simmer until soft. It will take more than 2 hours according to your preference. Once the pork leg is tender, set aside and reserve the broth.
  • In a separate big pan or wok, saute garlic until it become golden brown in color, then add the pork leg together with soaked annatto seed, ground peanut, pour the reserve broth, add peanut butter and banana bud, stir occasionally and simmer for 15 minutes. Season with salt to taste.
  • Add the remaining vegetables and cook for few minutes, do not overcook.
  • Serve it with cooked bagoong on the side. Enjoy while hot!
