Kare kare is one of my favorite traditional Filipino dish. It is simply a meat cooked with peanut based sauce. They mostly used ox tail, beef stripe, or pork leg. Some also are goat meat or chicken depends on your preference. For me personally speaking, I prefer the pork leg. Try this one and you will surely love it!

Kare kare Ingredients
- 1 bundle of sitaw ( string beans ), cut into 2 inches long
- 4 eggplants, sliced
- 1 bundle of petchay ( bokchoy), cut into 2 pieces
- 1/2 cup cooking oil
- 1 cup of cooked bagoong alamang ( shrimp paste )
- 3 cups of Peanut Butter
- 1/2 cup of ground peanut
- 2 medium size onions, diced
- 2 heads of garlic, minced
- 1 1/2 Pork leg, chop
- 1 small banana flower bud, sliced
- 1/2 cup of annatto seed ( soaked in a cup of water )
- salt to taste
- 1 liter of water
- In a large pot, put 1 liter of water, boil the pork leg add onions and simmer until soft. It will take more than 2 hours according to your preference. Once the pork leg is tender, set aside and reserve the broth.
- In a separate big pan or wok, saute garlic until it become golden brown in color, then add the pork leg together with soaked annatto seed, ground peanut, pour the reserve broth, add peanut butter and banana bud, stir occasionally and simmer for 15 minutes. Season with salt to taste.
- Add the remaining vegetables and cook for few minutes, do not overcook.
- Serve it with cooked bagoong on the side. Enjoy while hot!
